- Preheat your oven to 400°F (200°C).
- In a medium saucepan, melt 2 tablespoons of unsalted butter over medium heat. Add in 2 cups of diced red apples and 1 tablespoon of chopped fresh thyme, stirring gently to coat. Cook until caramelized, about 10 minutes.
- Stir in 1 tablespoon of honey, 2 tablespoons of brown sugar, 1 tablespoon of lemon juice, 0.5 teaspoon of cinnamon, 0.25 teaspoon of nutmeg, and 0.25 teaspoon of kosher salt. Cook on low for about 10 minutes until the apples are tender.
- Remove from heat and let the apple mixture cool slightly.
- On a lightly floured surface, unroll the puff pastry. Place the cooled apple mixture in the center.
- Carefully place a round of brie over the apple mixture.
- Fold the puff pastry over the brie, sealing the edges. Brush with a beaten egg for a glossy finish.
- Place seam-side down on a lined baking tray and bake for about 30 minutes until golden brown.
- While baking, lightly toast 0.25 cup of chopped walnuts in a small pan over medium heat for 3-5 minutes.
- Once baked, let it cool slightly, transfer to a serving platter, drizzle with honey, and sprinkle with toasted walnuts and thyme.
