Ingredients
  

For the Caramelized Apples
  • 2 tbsp Unsalted Butter Substitute with coconut oil for dairy-free.
  • 2 cups Red Apple, diced Granny Smith can be used for a tangy twist.
  • 1 tbsp Chopped Fresh Thyme Extra for garnish.
  • 1 tbsp Honey Maple syrup for vegan alternative.
  • 2 tbsp Brown Sugar Coconut sugar can be swapped for a healthier option.
  • 1 tbsp Lemon Juice Vinegar can be used as a substitute.
  • 0.5 tsp Cinnamon Omit if preferred.
  • 0.25 tsp Nutmeg Leave out if not desired.
  • 0.25 tsp Kosher Salt Sea salt works well if preferred.
For the Brie Pastry
  • 1 round Brie Camembert is a great substitute.
  • 1 sheet Puff Pastry Store-bought for convenience.
  • 1 egg Egg For egg wash, omit for vegan.
For the Crunch
  • 0.25 cup Chopped Walnuts Pecans work too, or omit for nut-free.
  • Flaky Salt Optional; regular salt can be used.

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a medium saucepan, melt 2 tablespoons of unsalted butter over medium heat. Add in 2 cups of diced red apples and 1 tablespoon of chopped fresh thyme, stirring gently to coat. Cook until caramelized, about 10 minutes.
  3. Stir in 1 tablespoon of honey, 2 tablespoons of brown sugar, 1 tablespoon of lemon juice, 0.5 teaspoon of cinnamon, 0.25 teaspoon of nutmeg, and 0.25 teaspoon of kosher salt. Cook on low for about 10 minutes until the apples are tender.
  4. Remove from heat and let the apple mixture cool slightly.
  5. On a lightly floured surface, unroll the puff pastry. Place the cooled apple mixture in the center.
  6. Carefully place a round of brie over the apple mixture.
  7. Fold the puff pastry over the brie, sealing the edges. Brush with a beaten egg for a glossy finish.
  8. Place seam-side down on a lined baking tray and bake for about 30 minutes until golden brown.
  9. While baking, lightly toast 0.25 cup of chopped walnuts in a small pan over medium heat for 3-5 minutes.
  10. Once baked, let it cool slightly, transfer to a serving platter, drizzle with honey, and sprinkle with toasted walnuts and thyme.
