Method
 

Step-by-Step Instructions
  1. Heat a non-stick skillet over medium heat and melt a small pat of butter to coat the pan.
  2. Crack one large egg into the skillet, season with salt and pepper, and cook for 2-3 minutes until the whites are set and yolk is runny. Repeat for the second egg.
  3. In the same skillet, lay one flour tortilla flat and sprinkle half of the shredded cheese evenly over it. Cook for 1-2 minutes until the cheese melts.
  4. Place fried eggs on the melted cheese, layer sliced avocado, then sprinkle remaining cheese over everything. Add the second tortilla on top and press down gently.
  5. Flip the quesadilla carefully using a spatula, and cook for another 2-3 minutes until golden brown and crispy.
  6. Remove from skillet, let cool, cut into wedges, and serve hot, optionally with salsa or fresh herbs.
