For the Dressing
  • 1/3 cup Olive Oil Avocado oil can be used as a substitute.
  • 3 tablespoons Red Wine Vinegar Apple cider vinegar works too.
  • 1 tablespoon Honey Maple syrup can be used for a vegan option.
  • 1 teaspoon Dijon Mustard Grainy mustard can also be used.

Step-by-Step Instructions
  1. Prepare the Ice Bath: Fill a large bowl with ice water and set it aside.
  2. Blanch Vegetables: Boil salted water, add green beans and sweet corn; cook for 2-3 minutes.
  3. Shock the Vegetables: Transfer blanched veggies to the ice bath for 15-30 seconds.
  4. Drain: Remove the vegetables from the ice bath and drain them in a colander.
  5. Prep Corn: Cut the corn off the cob and collect the kernels in a bowl.
  6. Assemble Salad: Combine cooled green beans, corn, and minced red onion in a bowl.
  7. Make Dressing: Blend olive oil, vinegar, honey, and mustard until smooth.
  8. Toss Salad: Drizzle dressing over salad, add dill and basil, then toss gently.
