  • 1 cup cannellini beans Drained
  • 1 cup chickpeas Drained
  • 1 jalapeño jalapeño Diced, for heat and tang
  • 1/2 bunch cilantro Chopped, reserve some for garnish
For the Dressing
  • 1 tblsp olive oil For creaminess
  • 1 tblsp white wine vinegar Can substitute with white balsamic or apple cider vinegar
  • 2 cloves garlic Minced
  • 1 lime lime Juice and zest
  • 1 tblsp miso For flavor
For Garnish
  • 1/2 cup pickled jalapeños For topping
  • 1 large avocado Diced

Method
 

Step‑by‑Step Instructions
  1. Pickle the jalapeños: Whisk together white wine vinegar, sugar, and salt until dissolved. Stir in jalapeños and half of the cilantro. Set aside for at least 15 minutes.
  2. Marinate the onion: Combine diced red onion with lime zest, lime juice, and a pinch of salt. Massage for 1 minute and let rest for 10 minutes.
  3. Prepare cucumbers: Cut cucumber in half, smack to crack, slice and sprinkle with salt. Let rest for 10 minutes.
  4. Make the dressing: Warm olive oil, sauté garlic until golden, then blend with pickled jalapeños, lime juice, vinegar, miso, cilantro, and salt until smooth.
  5. Assemble salad: In a large bowl, combine cucumbers, cannellini beans, chickpeas, and marinated onion. Pour dressing over and toss gently.
  6. Serve or store: Enjoy immediately or store in airtight containers for up to 4 days. Serve on tostadas or as a side.
