Ingredients
  

For the Beans

  • 1 can Cannellini Beans

For the Vegetables
  • 1 cup Green Pepper Any color bell pepper can be substituted.
  • 1 cup Celery Finely chopped cucumber can be used.
  • 1 small Red Onion Sweet onion can be used for a milder taste.
  • 1 cup Pimentos Roasted red peppers can be substituted.
For the Dressing
  • 2 tablespoons Granulated Sugar Maple syrup can be an alternative.
  • 1/3 cup Vegetable Oil Olive oil adds extra flavor.
  • 1/4 cup Cider Vinegar Red wine vinegar can replace it.
  • 2 tablespoons Water
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper Adjust according to taste.

Method
 

Preparation Steps
  1. Rinse all the canned beans under cold running water in a colander. Drain thoroughly and discard any discolored beans.
  2. Chop the green pepper, celery, red onion, and pimentos into bite-sized pieces. Combine with the beans in a large bowl.
  3. In a small saucepan, combine sugar, vegetable oil, cider vinegar, water, salt, and pepper. Heat over medium heat until boiling, stirring until sugar dissolves.
  4. Pour the hot dressing over the bean and vegetable mixture and toss gently to combine.
  5. Cover the bowl with plastic wrap and refrigerate for at least an hour.
  6. Stir the salad before serving, adjusting salt and pepper as needed.
