Preparation Steps

  2. Step 2: Marinate the Chicken - Mix olive oil, lime juice, chili powder, onion powder, garlic powder, smoked paprika, salt, and chipotle pepper in a bowl. Pour over chicken and mix until coated. Let sit for 15 minutes.
  3. Step 3: Cook the Rice - Cook rice according to package instructions, about 15-20 minutes. Set aside to cool.
  4. Step 4: Sauté the Chicken - Heat a skillet over medium-high heat and cook marinated chicken for 12-15 minutes until cooked through.
  5. Step 5: Cook the Vegetables - In the same skillet, add red bell pepper, jalapeño, and garlic, sautéing for 8 minutes.
  6. Step 6: Combine Chicken and Vegetables - Return chicken to skillet, mixing with veggies and heating for 2 minutes.
  7. Step 7: Assemble the Wraps - Warm tortillas and layer with rice, chicken-vegetable mixture, black beans, corn, cheese, and sauce. Roll tightly.
