Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine boneless chicken thighs, olive oil, cumin, garlic powder, and paprika in a medium bowl and let rest for at least 15 minutes.
  3. Place marinated chicken on the baking sheet and roast for about 25-30 minutes until cooked through.
  4. While chicken is roasting, mix mayo, chipotle peppers, and lime juice in a bowl to prepare the sauce.
  5. Slice avocado and chop cilantro and jalapeños as chicken finishes roasting.
  6. Let the chicken rest for a few minutes before slicing into thin strips.
  7. Toast the bolillo rolls in the oven or toaster until golden brown, about 3-5 minutes.
  8. Assemble the sandwich by spreading chipotle mayo on both sides of the rolls, layering in chicken, avocado, jalapeños, cilantro, and lettuce.
  9. Slice sandwiches in half and serve immediately.
