Preparation Steps
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Combine boneless chicken thighs, olive oil, cumin, garlic powder, and paprika in a medium bowl and let rest for at least 15 minutes.
- Place marinated chicken on the baking sheet and roast for about 25-30 minutes until cooked through.

- Slice avocado and chop cilantro and jalapeños as chicken finishes roasting.

- Assemble the sandwich by spreading chipotle mayo on both sides of the rolls, layering in chicken, avocado, jalapeños, cilantro, and lettuce.
