- In a medium bowl, combine olive oil, lime juice, lime zest, chili powder, brown sugar, salt, ground cumin, smoked paprika, onion powder, garlic powder, and black pepper. Whisk until smooth.
- Take the pounded chicken breasts and coat them thoroughly with the wet rub. Marinate for at least 30 minutes at room temperature or refrigerate for up to 4 hours.
- While the chicken marinates, heat a grill or grill pan to medium-high heat and lightly grease if using a grill pan.
- Once hot, place the marinated chicken on the grill, cooking for 4-6 minutes per side until a golden brown crust forms. Ensure chicken reaches an internal temperature of 165°F.
- Remove chicken from grill and let it rest for at least 5 minutes on a cutting board.
- In a mixing bowl, combine diced tomatoes, corn, red onion, red bell pepper, jalapeño, cilantro, and minced garlic. Mix well for a fresh salsa.
