Method
 

Preparation
  1. In a medium bowl, combine olive oil, lime juice, lime zest, chili powder, brown sugar, salt, ground cumin, smoked paprika, onion powder, garlic powder, and black pepper. Whisk until smooth.
  2. Take the pounded chicken breasts and coat them thoroughly with the wet rub. Marinate for at least 30 minutes at room temperature or refrigerate for up to 4 hours.
  3. While the chicken marinates, heat a grill or grill pan to medium-high heat and lightly grease if using a grill pan.
  4. Once hot, place the marinated chicken on the grill, cooking for 4-6 minutes per side until a golden brown crust forms. Ensure chicken reaches an internal temperature of 165°F.
  5. Remove chicken from grill and let it rest for at least 5 minutes on a cutting board.
  6. In a mixing bowl, combine diced tomatoes, corn, red onion, red bell pepper, jalapeño, cilantro, and minced garlic. Mix well for a fresh salsa.
  7. Gently fold in the diced avocados before serving and enjoy alongside the sliced Fiesta Lime Chicken.
