  • 2 cups Mixed Berries Strawberries, blueberries, and raspberries
  • 1/4 cup Granulated Sugar
  • 2 tablespoons Cornstarch

  • 1 cup Heavy Whipping Cream
  • 1/4 cup Powdered Sugar
  • 1 teaspoon Vanilla Extract Replace with almond extract if preferred

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and thaw the puff pastry sheets.
  2. Roll out each pastry sheet to about 1/8 inch thickness and cut into desired shapes.
  3. Place the cut pastry on a lined baking sheet and bake for about 25 minutes until golden brown.
Berry Filling
  1. In a saucepan, combine mixed berries, granulated sugar, and cornstarch over medium heat. Stir gently until thickened.
  2. Remove from heat and let it cool to room temperature.
Whipped Cream
  1. In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assembling the Cake
  1. Layer the baked pastry, whipped cream, and berry filling on a platter. Repeat until all ingredients are used.
  2. Finish with a top layer of whipped cream and refrigerate for at least 1 hour.
Garnishing
  1. Garnish before serving with fresh berries or mint sprig for presentation.
