Preparation
- Preheat your oven to 400°F (200°C) and thaw the puff pastry sheets.
- Roll out each pastry sheet to about 1/8 inch thickness and cut into desired shapes.
- Place the cut pastry on a lined baking sheet and bake for about 25 minutes until golden brown.
Berry Filling
- In a saucepan, combine mixed berries, granulated sugar, and cornstarch over medium heat. Stir gently until thickened.
- Remove from heat and let it cool to room temperature.
Whipped Cream
- In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assembling the Cake
- Layer the baked pastry, whipped cream, and berry filling on a platter. Repeat until all ingredients are used.
- Finish with a top layer of whipped cream and refrigerate for at least 1 hour.
Garnishing
- Garnish before serving with fresh berries or mint sprig for presentation.
