- Prep the corn. Cut fresh corn kernels off the cob or drain and rinse canned corn under cold water.
- Mix base ingredients. In a large mixing bowl, combine sour cream, mayonnaise, and softened cream cheese until smooth.
- Add cheeses and spices. Stir in shredded cheddar, pepper jack, garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper.
- Combine remaining ingredients. Gently fold in corn, green onions, red bell pepper, and jalapeño.
- Chill or bake. Cover and refrigerate for at least 30 minutes or bake at 375°F for 20-25 minutes.
- Serve and enjoy. Serve warm with tortilla chips or chilled with fresh veggies.
