Instructions
  1. Prep the corn. Cut fresh corn kernels off the cob or drain and rinse canned corn under cold water.
  2. Mix base ingredients. In a large mixing bowl, combine sour cream, mayonnaise, and softened cream cheese until smooth.
  3. Add cheeses and spices. Stir in shredded cheddar, pepper jack, garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper.
  4. Combine remaining ingredients. Gently fold in corn, green onions, red bell pepper, and jalapeño.
  5. Chill or bake. Cover and refrigerate for at least 30 minutes or bake at 375°F for 20-25 minutes.
