For the Energy Balls
  • 2 cups carrots, finely chopped
  • 1 cup Medjool dates, pitted soak if dry
  • 1 cup nuts (e.g., almonds or walnuts), finely ground or substitute with seeds
  • 1 cup old-fashioned oats or gluten-free oats if needed
  • 1/2 cup almond butter can substitute with peanut or sunflower seed butter
  • 1 teaspoon vanilla extract use natural for best flavor
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 cup desiccated coconut optional for rolling
For Coating (Optional)
  • 1/2 cup desiccated coconut

Equipment

  • Food processor

Method

Step‑by‑Step Instructions
  1. Begin by peeling and finely chopping the carrots. Place them in a food processor and pulse until they reach small, manageable pieces.
  2. In the same food processor, add your choice of nuts, old-fashioned oats, and optional desiccated coconut. Blend for about 1 minute until the mixture is finely ground.
  3. Now, add the almond butter, pure vanilla extract, optional maple syrup, your reserved chopped carrots, and the soft, pitted Medjool dates into the food processor. Blend everything until combined.
  4. Continue processing until a cohesive, sticky dough forms. Adjust consistency if too dry by adding more almond butter or water.
  5. With clean hands, scoop the mixture and roll it into golf ball-sized spheres, about 1 inch in diameter.
  6. If desired, roll each ball in desiccated coconut for an extra layer of texture. Refrigerate them for approximately 15 minutes.
