Method
 

Steps
  1. Prepare Earl Grey infusion by heating heavy cream and steeping with Earl Grey tea.
  2. Mix dry ingredients: flour, sugar, and baking powder in a large mixing bowl.
  3. Whisk eggs and gradually stir in cooled infused cream.
  4. Fold wet mixture into dry ingredients until just combined. Pour batter into prepared cake pan.
  5. Bake cake at 350°F for 25-30 minutes until toothpick comes out clean.
  6. Poke holes in the cooled cake for curd absorption.
  7. Spread honey lemon curd over the top of the cake.
  8. Make Earl Grey mascarpone cream by mixing mascarpone, powdered sugar, and vanilla until smooth.
  9. Spread mascarpone cream over the curd layer and chill for at least 2 hours.
  10. Serve slices with optional lemon zest or additional mascarpone cream.
