Steps
- Prepare Earl Grey infusion by heating heavy cream and steeping with Earl Grey tea.
- Mix dry ingredients: flour, sugar, and baking powder in a large mixing bowl.
- Whisk eggs and gradually stir in cooled infused cream.
- Fold wet mixture into dry ingredients until just combined. Pour batter into prepared cake pan.
- Bake cake at 350°F for 25-30 minutes until toothpick comes out clean.
- Poke holes in the cooled cake for curd absorption.
- Spread honey lemon curd over the top of the cake.
- Make Earl Grey mascarpone cream by mixing mascarpone, powdered sugar, and vanilla until smooth.
- Spread mascarpone cream over the curd layer and chill for at least 2 hours.
- Serve slices with optional lemon zest or additional mascarpone cream.
