  • 1 cup Guava Nectar or Guava Juice Fresh juice is ideal, but bottled works well.
  • 3 large Eggs Must be room temperature for better mixing.
  • 1/2 cup Coconut Oil Can substitute with melted butter or vegetable oil.
For the Cream Cheese Layer
  • 8 oz Cream Cheese Use dairy-free cream cheese for a lactose-free option.
  • 1/2 cup Granulated Sugar Feel free to reduce or use a sweetener of choice.
  • 1 tsp Vanilla Extract Almond extract can be a nice nutty substitute.
  • 1 cup Cool Whip Whipped coconut cream is a great dairy-free alternative.
For the Guava Glaze
  • 2.5 cups Guava Juice Used to create the glaze for that extra tropical touch.
  • 2 tbsp Cornstarch Thickens the glaze.
  • 1/2 cup Granulated Sugar Adjust according to your taste.
For Garnish
  • 1/2 cup Sugared Coconut Flakes Optional but highly recommended!

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and spray a 13x9 inch baking dish with vegetable oil.
  2. In a stand mixer, combine the Strawberry Cake Mix, Guava Juice, eggs, and melted Coconut Oil. Mix on low for 30 seconds, then increase to medium-high for 2 minutes.
  3. Pour the batter into the prepared baking dish and bake for 24-26 minutes until golden edges and a toothpick comes out clean.
  4. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  5. Beat the Cream Cheese until fluffy, mix in sugar and vanilla, then fold in Cool Whip and refrigerate.
  6. Spread the chilled cream cheese mixture over the cooled cake.
  7. In a saucepan, heat Guava Juice with sugar. Whisk cornstarch with water to make a slurry and mix into the juice until thickened.
  8. Once the glaze cools, pour it over the cream cheese layer on the cake.
  9. Garnish with Sugared Coconut Flakes, slice, and serve chilled.
