- Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
- Cream ¾ cup of softened butter and ½ cup of brown sugar together using an electric mixer for about 2-3 minutes.
- Add 1 egg (or flaxseed mixture) and ½ teaspoon of vanilla extract, mixing until well combined.
- Gradually sift in 1½ cups of flour and ¼ teaspoon of salt while mixing on low speed until a soft dough forms.
- Roll cookie dough into 1-inch balls and place them on the prepared baking sheet, spaced 1½ inches apart.
- Create two indents in each ball using your thumb or the back of a spoon to form heart shapes.
- Bake for 12-15 minutes, watching for edges to turn lightly golden.
- Cool the cookies on the baking sheet for 5 minutes, then reshape thumbprints if necessary and fill with jam.
