  • 1 teaspoon Onion Powder or garlic powder if preferred

Step-by-Step Instructions for Sweet Potato Tortillas
  1. Steam or boil 1 cup of sweet potatoes for 15-20 minutes until tender. Mash and mix with 2 tablespoons vegan butter and hot water.
  2. In a large bowl, combine the sweet potato mixture with 1/2 cup gluten-free sourdough starter and 2 tablespoons psyllium husk. Let rest for 10 minutes.
  3. Gradually mix in 1 cup arrowroot flour and 1 teaspoon baking powder until dough resembles soft cookie dough. Adjust texture as needed.
  4. Heat a skillet over medium heat. Divide dough into five balls, roll out each between parchment paper to 1/8 inch thick. Cook each tortilla for 30–45 seconds on each side.
