- In a large mixing bowl, combine the strawberry cake mix, melted butter, and egg until smooth, about 2 minutes.
- Add softened cream cheese and beat until thickened, about 2–3 minutes.
- Cover dough with plastic wrap and refrigerate for at least 1 hour.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized portions, roll into balls, and optionally coat in sugar.
- Place cookie balls 2 inches apart on baking sheets and bake for 8–10 minutes.
- Press a chocolate kiss into the center of each cookie after 1–2 minutes cooling on sheets.
- Transfer cookies to a wire rack to cool completely.
