Ingredients
  

For the Salad
  • 6-8 cups Romaine Lettuce Chopped into bite-sized pieces
  • 1 can Black Beans Drained and rinsed
  • 1 cup Corn Fresh, frozen, or canned
  • 1 cup Cherry Tomatoes Halved
  • 1 medium Red Bell Pepper Diced
  • 1 medium Red Onion Thinly sliced
  • 1 cup Shredded Cheddar Cheese Optional
  • 1/4 cup Fresh Cilantro Chopped
  • 1 cup Tortilla Strips/Chips Add before serving
For the Dressing
  • 1/4 cup Olive Oil
  • 2 tablespoons Lime Juice Adjust to taste
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Honey Or agave syrup for vegan
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder Adjust for spice level
  • 1/2 teaspoon Garlic Powder
  • to taste Salt & Black Pepper

Method
 

Preparation
  1. Rinse and dry the romaine lettuce, then chop it into bite-sized pieces.
  2. Halve the cherry tomatoes, dice the red bell pepper, and slice the red onion.
  3. If using, slice avocado just before serving.
  4. In a mixing bowl, combine olive oil, lime juice, apple cider vinegar, honey, ground cumin, chili powder, garlic powder, salt, and pepper; whisk until smooth.
  5. In a large bowl, combine lettuce, black beans, corn, cherry tomatoes, red bell pepper, red onion, and cilantro; toss gently.
  6. Drizzle dressing over the salad and toss until evenly coated.
  7. Sprinkle tortilla strips over the salad just before serving.
  8. Serve immediately with lime wedges or extra dressing if desired.
