Step-by-Step Instructions
  1. Preheat your oven to 375ºF (190ºC) and grease a medium baking dish with olive oil.
  2. Combine cubed zucchini, chopped bell pepper, diced onion, and halved grape tomatoes in a bowl.
  3. Sprinkle the vegetable mixture with Italian herb blend, garlic powder, salt, and cracked pepper. Add half of the mozzarella cheese and drizzle olive oil over it.
  4. Pour the mixture into the greased baking dish and bake uncovered for approximately 20 minutes.
  5. Sprinkle the remaining mozzarella cheese over the vegetables and return to the oven for an additional 10 minutes.
  6. Let the dish rest for a few minutes before serving, garnished with fresh parsley and chili flakes.
