- Preheat your oven to 375ºF (190ºC) and grease a medium baking dish with olive oil.
- Combine cubed zucchini, chopped bell pepper, diced onion, and halved grape tomatoes in a bowl.
- Sprinkle the vegetable mixture with Italian herb blend, garlic powder, salt, and cracked pepper. Add half of the mozzarella cheese and drizzle olive oil over it.
- Pour the mixture into the greased baking dish and bake uncovered for approximately 20 minutes.
- Sprinkle the remaining mozzarella cheese over the vegetables and return to the oven for an additional 10 minutes.
- Let the dish rest for a few minutes before serving, garnished with fresh parsley and chili flakes.
