For the Chicken Marinade

  • Black Pepper To taste

For the Aji Verde
  • 1 cup Fresh Cilantro Leaves Key for authentic flavor
  • 2 Green Onions Chopped
  • 1/2 cup Mayonnaise Greek yogurt is an alternative
  • 1/4 cup Greek Yogurt Sour cream is a swap
  • 1/2 teaspoon Salt Adjust to preference

Method
 

Steps to Prepare
  1. In a blender, combine garlic, soy sauce, lime juice, and olive oil. Blend until smooth.
  2. Add cumin, paprika, dried oregano, and black pepper. Blend again, then pour over chicken thighs in a zip-top bag.
  3. Seal the bag and refrigerate for at least 8 hours, preferably overnight.
  4. To prepare the aji verde, blend jalapeños, cilantro leaves, and green onions until smooth. Slowly drizzle in olive oil while blending.
  5. Transfer the green sauce to a bowl and refrigerate until ready to serve.
  6. Preheat your grill to medium-high heat. Grill the marinated chicken for 5-6 minutes on each side or until fully cooked.
  7. Alternatively, preheat your oven to 500°F and roast the chicken for 30 minutes, then cover and bake for another 15 minutes.
  8. Allow the chicken to rest for a few minutes, then serve with a generous drizzle of the green sauce and lime wedges.
