Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease the mini bundt pans.
  2. In a medium bowl, mix together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, combine sugar, eggs, buttermilk, avocado oil, and vanilla extract until smooth.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in grated carrots and chopped walnuts gently.
  6. Divide the batter among mini bundt pans, filling each about 2/3 full.
  7. Bake for 20–25 minutes until a toothpick comes out clean.
  8. Cool the cakes in the pans for 10 minutes before transferring to a wire rack.
  9. Prepare the frosting by creaming together cream cheese and butter, then add powdered sugar and salt.
  10. Frost the cooled cakes with cream cheese frosting and decorate if desired.
