  • 2 cups diced Yukon gold potatoes no peeling required
  • 1 pound lean ground beef aim for 90/10% for flavor
  • 1 medium yellow onion can swap with white or red onion
  • 1 medium red bell pepper any bell pepper works
  • kosher salt adjust to your liking
  • black pepper adjust to your liking
  • 1 can (4 ounces) diced green chiles choose mild for less spice
  • 1 teaspoon chili powder essential for authentic flavor
  • 1 teaspoon ground cumin crucial for authenticity
  • 1 teaspoon smoked paprika regular paprika can be used
  • cilantro omit if not a fan
  • 1 cup shredded cheese cheddar, Monterey Jack, or Pepper Jack

Method
 

Preparation Steps
  1. Heat 2 tablespoons of avocado oil in a large cast iron skillet over medium-high heat until shimmering.
  2. Add 2 cups of diced Yukon gold potatoes to the skillet, stirring frequently for 5-6 minutes until golden brown and tender.
  3. Push the potatoes to one side and add 1 pound of lean ground beef, crumbling as it cooks for 4-5 minutes until browned.
  4. Incorporate 1 diced yellow onion and 1 diced red bell pepper, cooking for 3-4 minutes until the veggies soften.
  5. Stir in 1 can of diced green chiles and 1 teaspoon each of chili powder, ground cumin, and smoked paprika; cook for another 2-3 minutes.
  6. Return the potatoes to the skillet, mix well, and adjust seasoning with kosher salt and black pepper. Top with 1 cup of shredded cheese and reduce heat to low for 2-3 minutes until melted.
