- Cook the lasagna noodles in salted boiling water until al dente, about 8-10 minutes. Drain and transfer to cold water.
- Brown ground beef in a pan over medium heat for 5-7 minutes. Add onion and garlic, sauté until onion is translucent.
- Stir in marinara sauce, season with salt, pepper, and oregano. Simmer for 5 minutes.
- In a bowl, mix ricotta, egg, Parmesan, mozzarella, and parsley until creamy.
- Lay each noodle flat, spread cheese filling, and add meat sauce. Roll tightly.
- Spread meat sauce in a baking dish, place roll-ups seam-side down, top with remaining sauce and mozzarella.
- Cover and bake at 375°F for 40 minutes, then broil for 2-3 minutes until cheese is golden.
