Preparation Steps
- Spread softened unsalted butter on one side of each slice of sourdough bread.
- On the unbuttered side of two slices, layer fresh mozzarella cheese, ripe tomato slices, and basil leaves. Drizzle with pesto and season with salt and pepper.
- Place the remaining slices of sourdough buttered-side-up over the layers to complete the sandwiches.
- Preheat a skillet over medium heat for about 2 minutes.
- Cook the sandwiches for 3-4 minutes until the bottom is golden brown and crispy before flipping.
- Flip the sandwiches gently and cook for an additional 3-4 minutes.
- Remove sandwiches from the skillet, drizzle with balsamic glaze if desired, slice in half, and serve immediately.
