Method
 

Dough Preparation

Filling Preparation
  1. Combine ricotta cheese, chopped spinach, and grated parmesan in a medium bowl. Add nutmeg, mix well, and adjust seasoning.
Dough Rolling
  1. Divide dough into two halves. Roll one half out on a floured surface until 1/8 inch thick. Use a heart-shaped cutter for desired shapes.
Ravioli Assembly
  1. Place a teaspoon of filling on each heart-shaped dough piece. Moisten edges with water, top with another heart, and seal edges. Use a fork to crimp.
Cooking Ravioli
