- Line a small sheet pan with parchment paper and lightly brush with extra virgin olive oil.
- Toast the sesame seeds in a nonstick pan over medium heat for 3–4 minutes until golden brown.
- Pour the toasted seeds on a plate to cool, then return the pan to the heat and add honey.
- Stir honey until bubbling and reaches 250°F, about 3–4 minutes.
- Stir toasted sesame seeds back into the honey and mix for about 5 minutes.
- Pour the mixture into the prepared pan, spreading it evenly.
- Allow to cool for 20 minutes, then cut into pieces.
