Preparation
- Preheat your oven to 350°F (175°C).
- In a food processor, combine Nilla Wafers, sugar, and melted butter. Pulse until the mixture resembles coarse crumbs.
- Line a muffin pan with cupcake liners, then press the crumb mixture into each cup.
- In a mixing bowl, blend cream cheese, Funfetti cake mix, sour cream, vanilla extract, sugar, and eggs until smooth.
- Spoon the cheesecake filling into the prepared crusts until filled to the top.
