- In a food processor, combine 2 cups of fresh sage leaves, 2 cloves of garlic (peeled), ½ cup of pine nuts, and ½ cup of grated Parmesan cheese. Pulse these ingredients together for about 30 seconds, until the mixture is finely chopped and well combined.
- With the processor running, slowly drizzle in ½ cup of extra virgin olive oil through the feed tube. Continue blending for another minute or until you achieve a creamy and smooth pesto consistency.
- After blending, taste your fresh sage pesto and add salt as needed. Blend briefly for about 10-15 seconds to incorporate the salt evenly.
- Transfer your freshly prepared sage pesto to an airtight container or jar. If you’re not using it immediately, cover the surface with a thin layer of olive oil to prevent oxidation and browning.
