  • 1 cup Cucumber sliced
  • 1 cup Red bell pepper sliced
  • 1/2 cup Fresh cilantro chopped
  • 2 pieces Grilled chicken breast sliced
For the Peanut Dressing
  • 1/3 cup Peanut butter or almond/sun butter
  • 2 tablespoons Low-sodium soy sauce or gluten-free tamari
  • 1 tablespoon Honey or maple syrup
  • 2 tablespoons Rice vinegar or apple cider vinegar
  • 1 tablespoon Sesame oil or olive oil
  • 1 clove Garlic minced
  • 2 tablespoons Water to thin the dressing

Method
 

Instructions
  1. Preheat your grill to medium-high heat (about 375°F to 450°F). Season the chicken breasts with salt and pepper and grill for 6-7 minutes on each side until cooked through. Let it rest before slicing.
  2. In a mixing bowl, combine peanut butter, soy sauce, honey, rice vinegar, sesame oil, and minced garlic. Whisk until smooth, adding water gradually until desired consistency is reached.
  3. In a large bowl, mix shredded cabbage, carrots, cucumber, red bell pepper, and cilantro. Toss to combine well before adding sliced chicken on top.
  4. Drizzle the peanut dressing over the salad and toss gently to combine. Serve immediately for the best flavor and texture.
