- Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with butter.
- Melt the butter over medium heat until golden brown, about 5-7 minutes.
- Warm the whole milk until just about to simmer, then steep lemon zest in it for 10 minutes.
- In a large bowl, whisk egg yolks with browned butter, sweetened condensed milk, and steeped milk until smooth.
- Sift in all-purpose flour and salt, folding gently until combined.
- Whip egg whites until soft peaks form, then fold into the batter gently.
- Fold in fresh lemon juice carefully.
- Allow batter to rest for 5 minutes before filling muffin cups three-quarters full.
- Bake for 22-25 minutes, until edges are firm and centers jiggle slightly.
