Step‑by‑Step Instructions for Cookie Ice Cream Sandwiches
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine the cookie dough with brown sugar, vanilla extract, and a pinch of sea salt. Scoop out tablespoon-sized portions and place them on a parchment-lined baking sheet, leaving space for spreading. Bake for 10-12 minutes until the edges are golden brown and the centers look slightly underbaked.
- Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes. Transfer the cookies to a wire rack to cool completely.
- Once cookies are completely cool, scoop a generous amount of vanilla ice cream onto the flat side of one cookie. Place another cookie on top and press gently to spread the ice cream to the edges. Repeat for all cookies.
- After assembling, arrange the sandwiches on a parchment-lined tray and place in the freezer for at least 30 minutes to firm up.
- Remove from freezer, add whipped cream and fresh berries on top if desired, and serve immediately.

Notes
Ensure the cookie dough is thick for chewy cookies. Let cookies cool completely to maintain shape and avoid melting the ice cream too quickly. You can make ahead a day in advance for convenience.
