- Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 and ½ cups of crushed chocolate cookies with ½ cup of melted unsalted butter, mixing until the crumbs are evenly coated. Press the mixture into a 9-inch pie dish and bake for 10 minutes until set. Allow to cool completely.
- In a medium bowl, mix 1 cup of creamy peanut butter, 1 cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy, about 2–3 minutes. Pour this into the cooled crust.
- Heat 1 cup of heavy cream in a small saucepan until it simmers. Remove from heat and pour over 1 cup of chocolate chips. Allow to sit for 1–2 minutes before stirring until smooth.
- Let the ganache cool slightly for about 5 minutes. Pour over the peanut butter filling and swirl with a spatula. Cover and refrigerate for at least 2 hours.
- When ready to serve, remove from refrigerator, and garnish with chocolate shavings or whipped cream. Slice and enjoy!
