  • 1 large English Cucumber
  • 3 stalks Green Onions
For the Dressing
  • 1/2 cup Mayonnaise or Greek yogurt
  • 1/4 cup Sour Cream or dairy-free yogurt
  • 1 large Lime juice and zest
  • 2 tablespoons Fresh Dill or parsley
  • 1 tablespoon Dijon Mustard optional
  • 1 clove Garlic minced

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whip together mayonnaise, sour cream, lime zest, and juice, dill, Dijon mustard, minced garlic, and a pinch of salt and pepper.
  2. Bring a pot of water to a rolling boil. Add shrimp and cook for 2-3 minutes until pink and opaque.
  3. Remove shrimp and place them in an ice water bath for 3 minutes to cool completely.
  4. Slice the cucumber into small cubes and chop the green onions.
  5. Combine the chilled shrimp, cucumber, and green onions in a large bowl. Drizzle with dressing and mix well.
  6. Serve immediately or refrigerate for later use, ideally within a couple of days.
