Step‑by‑Step Instructions
  1. Place the boneless, skinless chicken breasts in your Crockpot, ensuring they're arranged evenly.
  2. In a mixing bowl, whisk together the honey, low-sodium soy sauce, ketchup, hoisin sauce (if using), minced garlic, grated ginger, rice vinegar, black pepper, and optional red pepper flakes. Pour the mixture evenly over the chicken.
  3. Cover the Crockpot and set it to cook on High for 4 hours or Low for 6 to 7 hours.
  4. Create a cornstarch slurry by whisking together cornstarch and cold water, then stir this into the hot sauce in your Crockpot. Cook on High for an additional 15 to 20 minutes.
  5. If desired, add any hearty vegetables at the start of cooking and gentler veggies during the last hour.
  6. Once everything is cooked, shred the chicken in the Crockpot using two forks and serve over a base of cooked rice, quinoa, or steamed vegetables, garnished with fresh parsley or green onions.
