- Spray the inside of a 6-quart crockpot with nonstick cooking spray. Layer diced potatoes at the bottom, followed by diced ham and chopped onion.
- In a medium bowl, whisk together cream of chicken soup, whole milk, 1½ cups of cheddar cheese, garlic powder, salt, and pepper until smooth.
- Pour the sauce over the layered ingredients in the crockpot, stirring gently to coat. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until potatoes are fork-tender.
- Sprinkle remaining ½ cup of cheddar cheese on top of the casserole, cover, and cook for an additional 10–15 minutes until cheese melts.
- Serve warm, garnishing with chopped parsley or green onions.
