  • 1 can Black Beans Drained and rinsed
  • 1 cup Corn Optional
  • 1 can Diced Tomatoes Fresh if in season
  • 2 tbsp Tomato Paste Don’t skip this!
  • 2 cups Beef Broth Vegetable broth for vegetarian
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 2 tbsp Spices (e.g., chili powder, cumin) Adjust for desired heat
For Serving (Optional)
  • 1 cup Shredded Cheese Cheddar or pepper jack
  • 1 cup Sour Cream Greek yogurt as alternative
  • 1 bunch Green Onions Substitute with chives

Preparation
  1. Begin by heating a large skillet over medium heat. Add the ground beef to the skillet and cook until fully browned, about 6-8 minutes. Drain excess grease.
  2. In your Crockpot, add the browned ground beef along with the black beans, corn, diced tomatoes, and tomato paste. Pour in the beef broth, chopped onion, minced garlic, and all spices. Stir thoroughly.
  3. Cover the Crockpot and set it to low heat for 6-8 hours or high heat for 3-4 hours.
  4. Once cooked, give your chili a good stir and ladle it into bowls. Top with shredded cheese, sour cream, and green onions.
