Preparation Steps
- Gently remove the stamen from each squash blossom and rinse them under cool water to remove any dirt. Pat them dry carefully.
- In a mixing bowl, combine fresh ricotta, grated Parmesan, mint, parsley, red pepper flakes, salt, pepper, and lemon zest. Mix until creamy.
- Fill each squash blossom with the ricotta mixture using a piping bag, and pinch the ends to seal.
- Whisk together self-rising flour and white wine until smooth. Adjust thickness if needed.
- Heat vegetable oil in a saucepan to 350°F (175°C). Test with a spoonful of batter; it should sizzle.
- Dip each stuffed blossom into the batter and fry in small batches for 2-3 minutes until golden brown.
- Sprinkle the fried blossoms with salt and serve immediately with lemon wedges.
