Step‑by‑Step Instructions
  1. Peel the potatoes and cut into 1-inch cubes. Rinse under cold water to remove excess starch and dry with a towel.
  2. Drizzle the cubed potatoes with olive oil. Mix in smoked paprika, cayenne pepper, garlic, and salt. Toss until fully coated.
  3. Preheat the oven to 425°F (220°C) and line a baking sheet. Spread potatoes in a single layer and bake for 20-25 minutes.
  4. Prepare dipping sauce by mixing aioli or mayonnaise with lemon juice. Warm spicy tomato sauce.
  5. Remove potatoes from oven, garnish with parsley, and serve with dipping sauces.
