Method
 

Preparation Steps
  1. Begin by peeling the yellow potatoes and cutting them into large chunks for even cooking.
  2. Place potato chunks into a large pot, cover with cold water, and bring to a boil over medium-high heat. Cook for about 10–12 minutes until fork-tender, then drain and shock in cold water for 1 minute.
  3. Transfer cooled potatoes to a mixing bowl and coat generously with duck fat while still warm. Toss gently so every piece is covered.
  4. Sprinkle parboiled potatoes with kosher salt, black pepper, garlic, and rosemary. Mix gently to ensure even coating.
  5. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange potatoes in a single layer.
  6. Roast in the oven for about 1 hour, flipping halfway through to ensure even browning. They should be golden with a crispy crust.
  7. Just before serving, sprinkle flaky sea salt over the potatoes for an added burst of flavor.
