Preparation Steps
- Begin by peeling the yellow potatoes and cutting them into large chunks for even cooking.
- Place potato chunks into a large pot, cover with cold water, and bring to a boil over medium-high heat. Cook for about 10–12 minutes until fork-tender, then drain and shock in cold water for 1 minute.
- Transfer cooled potatoes to a mixing bowl and coat generously with duck fat while still warm. Toss gently so every piece is covered.
- Sprinkle parboiled potatoes with kosher salt, black pepper, garlic, and rosemary. Mix gently to ensure even coating.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange potatoes in a single layer.
- Roast in the oven for about 1 hour, flipping halfway through to ensure even browning. They should be golden with a crispy crust.
- Just before serving, sprinkle flaky sea salt over the potatoes for an added burst of flavor.
