Step-by-Step Instructions

  2. Slice the eggplant into ½-inch rounds and sprinkle with salt. Let them sit for 30 minutes.
  3. Rinse the eggplant slices under cold water and pat them dry thoroughly.
  4. In a mixing bowl, combine panko breadcrumbs, garlic powder, salt, pepper, and Parmesan cheese. Mix well.
  5. Drizzle olive oil over the eggplant slices, then dip each slice into the breadcrumb mixture.
  6. Arrange the coated eggplant in a single layer on the baking sheet and bake for 25-30 minutes.
  7. Halfway through, gently flip each slice for even crispiness.
