- Start by bringing 4 cups of water to a vigorous boil in a large saucepan over medium-high heat. Add a pinch of salt.
- Gradually whisk in 1 cup of polenta, reducing heat to low, and stir continuously to prevent lumps for about 5-7 minutes.
- Pour the thickened polenta into a greased baking dish, spreading it evenly to about ½ inch thickness. Cool for at least 15 minutes.
- Once set, cut the polenta into triangles or squares.
- In a skillet, heat about ½ inch of oil over medium-high heat until it sparkles.
- Carefully place the polenta pieces in the oil in batches, frying for 3-4 minutes per side until golden brown.
- Transfer fried polenta onto paper towels to drain excess oil. Serve warm with marinara sauce.
