Step‑by‑Step Instructions
  1. In a large mixing bowl, start with 3 cups of chilled, cooked rice. Break up any clumps with a fork.
  2. Add 2 large eggs, 1/2 cup grated Parmesan cheese, and 1/2 cup shredded cheddar or mozzarella cheese to the rice.
  3. Sprinkle in garlic powder, salt, and black pepper. Toss in 2 tablespoons of finely chopped chives or green onions and mix gently.
  4. Shape the mixture into small round patties, approximately 2-3 inches wide.
  5. In a large skillet, heat 3-4 tablespoons of oil over medium-high heat until shimmering.
  6. Carefully place the patties in the hot oil and fry for about 3-5 minutes until golden brown.
  7. Flip each patty over and fry the other side for an additional 3-5 minutes until equally crispy.
