  • 1/2 cup Mayonnaise Avocado mayo can be used as an alternative.
  • 1/4 cup Cottage Cheese Optional; skip for dairy-free.
  • 1 tablespoon Distilled White Vinegar Adds brightness to the dip.

Method
 

Preparation Steps
  1. Grate one medium zucchini, sprinkle with kosher salt, and let sit for 10 minutes to draw out moisture.
  2. Mix drained zucchini with ground chicken, minced garlic, chopped chives, kosher salt, and black pepper until combined. Shape into six patties.
  3. Prepare the cilantro sauce by blending cilantro, garlic, mayonnaise, cottage cheese, and vinegar until smooth. Chill for at least 30 minutes.
  4. Heat oil in a skillet and fry the patties for about 4 minutes per side until golden brown and cooked through.
  5. Drain on paper towels and serve warm with cilantro dip.
