Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9-inch round cake pan with olive oil.
  2. Peel and thinly slice the potatoes to about ⅛ inch thick.
  3. In a large mixing bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme leaves, salt, and pepper.
  4. Toss the thinly sliced potatoes in the marinade until evenly coated.
  5. Layer the marinated potatoes in the prepared pan, starting from the outside and working inward.
  6. If desired, sprinkle mozzarella cheese between potato layers.
  7. Cover the pan with aluminum foil and bake for 45 minutes.
  8. Remove the foil and continue baking for an additional 30 minutes until golden brown.
  9. Allow the torte to cool in the pan for about 15 minutes.
  10. Run a knife around the edges, invert the pan onto a serving plate, slice, and serve warm.
