- Preheat your oven to 400°F (200°C) and grease a 9-inch round cake pan with olive oil.
- Peel and thinly slice the potatoes to about ⅛ inch thick.
- In a large mixing bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme leaves, salt, and pepper.
- Toss the thinly sliced potatoes in the marinade until evenly coated.
- Layer the marinated potatoes in the prepared pan, starting from the outside and working inward.
- If desired, sprinkle mozzarella cheese between potato layers.
- Cover the pan with aluminum foil and bake for 45 minutes.
