- Preheat your oven to 450°F (232°C). Line baking sheets with parchment paper for easy cleanup.
- Brown 1 pound of lean ground beef in a skillet over medium-high heat, breaking it apart as it cooks. Stir in taco seasoning and red enchilada sauce, and let simmer for 3-4 minutes.
- Wrap 10 corn tortillas in a damp paper towel, and microwave for 30-60 seconds until warm.
- Brush one side of each tortilla with 1 tablespoon of olive oil, and place them oiled side down on the baking sheet.
- Sprinkle about 2 tablespoons of shredded Oaxaca cheese on each tortilla, add 1/4 cup of beef mixture on top, and finish with another 2 tablespoons of cheese. Fold the tortillas to seal.
- Bake tacos in the preheated oven for 16 minutes or until golden brown and crispy.
- Let the tacos cool for about 3 minutes before serving with salsa, guacamole, or creamy sauces.
