For the Beef Filling
  • 1 lb Lean Ground Beef Opt for 90% lean for less fat
  • 1 packet Taco Seasoning Use homemade or store variety
  • 3/4 cup Red Enchilada Sauce Green enchilada sauce can be a twist
For the Tacos
  • 10 pieces Corn Tortillas Flour tortillas can be used, adjust baking time
  • 1 cup Oaxaca Cheese Substitute with favorite melting cheese
  • 1 tbsp Olive Oil Cooking spray can be a substitute

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C). Line baking sheets with parchment paper for easy cleanup.
  2. Brown 1 pound of lean ground beef in a skillet over medium-high heat, breaking it apart as it cooks. Stir in taco seasoning and red enchilada sauce, and let simmer for 3-4 minutes.
  3. Wrap 10 corn tortillas in a damp paper towel, and microwave for 30-60 seconds until warm.
  4. Brush one side of each tortilla with 1 tablespoon of olive oil, and place them oiled side down on the baking sheet.
  5. Sprinkle about 2 tablespoons of shredded Oaxaca cheese on each tortilla, add 1/4 cup of beef mixture on top, and finish with another 2 tablespoons of cheese. Fold the tortillas to seal.
  6. Bake tacos in the preheated oven for 16 minutes or until golden brown and crispy.
  7. Let the tacos cool for about 3 minutes before serving with salsa, guacamole, or creamy sauces.
