Ingredients
  

For the Pudding Base
  • 1 package Instant Vanilla Pudding Mix Can use sugar-free pudding for a lighter option.
  • 1.5 cups Cold Milk Skim or non-dairy milk are great alternatives.
  • 1 cup Frozen Whipped Topping Can use fresh whipped cream, but may require stabilizers.
For the Fruity Mix
  • 1 can Canned Pineapple Well-drained. Fresh pineapple can be substituted.
  • 1 can Canned Mandarins Well-drained. Fresh oranges work, dried thoroughly.
  • 2 cups Grapes Any seedless variety, halved.
  • 1 cup Strawberries Quartered; can use other berries.
  • 1 cup Mini Marshmallows Optional; can be omitted for a lighter salad.
  • 2 medium Bananas To be added last to prevent browning.

Method
 

Preparation Instructions
  1. In a mixing bowl, whisk together the instant vanilla pudding mix and 1 ½ cups of cold milk for 2 minutes until thickened.
  2. Gently fold in 1 cup of thawed frozen whipped topping until smooth and well combined.
  3. Prepare your fruits by draining the canned pineapple and mandarins, washing and halving the grapes, and quartering the strawberries.
  4. In a large mixing bowl, toss together the drained pineapple, mandarins, halved grapes, and quartered strawberries.
  5. Pour the creamy pudding mixture over the combined fruits and carefully fold the dressing into the fruit.
  6. If desired, gently fold in mini marshmallows. Add sliced bananas just before serving.
  7. Cover and refrigerate for at least 1 hour, preferably 2 to 4 hours, to allow the flavors to meld.
  8. Before serving, gently stir and transfer to a decorative bowl. Garnish with mint leaves, if desired.
