For the Greens
  • 8 oz Spinach Brightens the dish; you can swap with baby kale or Swiss chard

Method
 

Cooking Instructions
  1. Boil a large pot of salted water over high heat. Add 1 pound of pasta and cook until just under al dente. Reserve ½ cup of pasta water, then drain.
  2. Heat 2 tablespoons of olive oil in a deep skillet over medium heat. Add 6 minced garlic cloves and cook until fragrant.
  3. Add 1 pound of sliced cremini mushrooms to the skillet. Season with salt and pepper, and cook undisturbed for about 8 minutes.
  4. Toss in 8 ounces of fresh spinach and cook for 2-3 minutes until wilted.
  5. Pour in 2¼ cups of half-and-half and bring to a gentle boil. Simmer for about 4 minutes until the sauce thickens.
  6. Remove from heat, add drained pasta, 1 cup of freshly grated Parmesan cheese, and 2 tablespoons of chopped parsley. Mix until well combined.
  7. Taste and adjust seasoning with salt and pepper. Serve immediately, garnished with additional Parmesan and parsley.
