  • 1 medium Yellow Onion diced
  • 3 cloves Garlic minced
  • 1 medium Jalapeño diced
  • 1 tablespoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • 2 tablespoons Chili Powder
  • 1 pinch Black Pepper
  • 4 cups Chicken Broth
For the Creaminess
  • 1 cup Heavy Cream or coconut cream
  • 1 tablespoon Lime Juice
For the Body
  • 2 cans White Beans drained and rinsed
  • 1 cup Corn optional
  • 2 cups Shredded Chicken Breasts
  • 1 can Diced Green Chiles optional
For Toppings
  • 1 cup Cotija Cheese crumbled
  • 1 cup Sour Cream or Crema
  • 1 cup Fresh Cilantro for garnish
  • 1 cup Tortilla Strips or Chips
  • to taste Hot Sauce optional

Base Preparation
  1. In a large pot, heat olive oil over medium heat for about 1 minute. Add diced onion and jalapeño. Sauté for 4–5 minutes until onion is translucent.
  2. Stir in minced garlic, ground cumin, dried oregano, chili powder, and black pepper. Cook for 30 seconds until fragrant.
Combine Ingredients
  1. Slowly pour in chicken broth, followed by white beans, corn (if using), and diced green chiles. Mix well and bring to a simmer for 10–12 minutes.
  2. Add shredded chicken to the chili and heat through for another 3–4 minutes.
Final Touches
  1. Gradually mix in heavy cream and lime juice. Stir gently and adjust salt to taste.
  2. Ladle into bowls and garnish with cotija cheese, cilantro, and tortilla strips.

Notes
