Method
 

Step-by-Step Instructions
  1. Boil salted water, add 3 cups of rotini pasta, and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. In a skillet, cook 1 lb of ground beef or turkey over medium-high heat for 5-7 minutes until browned. Drain excess grease.
  3. Sprinkle taco seasoning over meat, add water if necessary, stir well, and let simmer on low for 2-3 minutes. Cool slightly.
  4. In a large bowl, combine cooled pasta, seasoned meat, 1 cup halved cherry tomatoes, 1 cup drained corn, 1 cup rinsed black beans, 1/2 cup diced red onion, 1/4 cup sliced black olives, 1 cup shredded cheddar cheese, and 1/2 cup chopped cilantro. Mix gently.
  5. Whisk together 1 1/2 cups ranch dressing and juice of 1 lime. Pour over the pasta mixture and toss to coat.
