- Rinse 1 cup of rice under cold water until clear. In a pot, combine with 2 cups of water and a pinch of salt. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Fluff with a fork.
- Season 2 salmon fillets with salt and pepper. Heat skillet over medium-high and add 1 tablespoon olive oil and 1 tablespoon butter. Cook salmon skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes. Keep warm.
