  • 2 cups Cucumbers Small varieties like English or Kirby for crunchier texture
  • 1 cup Radishes Thinly sliced for balance of spice and crunch
  • 3 tablespoons Scallions Chopped; can swap for fresh dill or parsley
For the Dressing
  • 1 cup Cottage Cheese Can substitute with feta for a tangier flavor
  • 1 teaspoon Sea Salt Adjust according to taste
  • 1 teaspoon Black Pepper Season to liking

Method
 

Steps
  1. Wash the cucumbers under cool running water. Peel if the skin is hard, then cut in half lengthwise, scoop out seeds, and slice into thin half-moons. Set aside.
  2. Rinse radishes to remove dirt, trim tops and bottoms, then slice paper-thin. Add to the bowl with cucumbers.
  3. Chop scallions under running water and combine them with the cucumber and radish slices in the bowl.
  4. Add cottage cheese to the bowl and season with sea salt and black pepper. Mix gently.
  5. Carefully mix all the ingredients until evenly coated. Serve immediately or chill before serving.
