- Wash the cucumbers under cool running water. Peel if the skin is hard, then cut in half lengthwise, scoop out seeds, and slice into thin half-moons. Set aside.
- Rinse radishes to remove dirt, trim tops and bottoms, then slice paper-thin. Add to the bowl with cucumbers.
- Chop scallions under running water and combine them with the cucumber and radish slices in the bowl.
- Add cottage cheese to the bowl and season with sea salt and black pepper. Mix gently.
- Carefully mix all the ingredients until evenly coated. Serve immediately or chill before serving.
